    This is a lot better than the first time that I made cinnamon rolls. The recipe I used turned the dough into soup which I then had to put in another pan and make a cinnamon cake. (Which didn't look that great either but it tasted good).

    When it comes to gluten free cinnamon rolls I would highly recommend doing the no proof kind. They turn a lot better and look like actually cinnamon rolls.

    My mom says they didn't turn out well because you didn't knead the dough :< and you proofed it for way too long the second time, an hour or two is enough.
    They were also dry because you melted the butter, it's only supposed to be soft.

    For your filling mix brown sugar soft butter and cinnamon together it makes a better filling I think your buns over prooved but still looked amazing :)

    Next tine when proofing put it in a cooler with a cup of really hot water and that will help it rise. But don’t leave it over night just leave it for a few hours. Also when you added the extra flour that is why it got flat. And your yeast wasn’t fully finished. When the yeast is ready it will grow and be foamy and bubbly. But they still looked good! I love watching these because I went too school for cooking and I like helping other people with problems I had before I graduated from college with my culinary degree

      xanthan gum is used to give the dough or batter the stickiness and allows it to rise that would otherwise be achieved with gluten. When he is first preparing the flour he quickly adds it.

    (all advice from me, a former pastry chef) next time, for cinnamon rolls specifically, you should make a paste with the butter and cinnamon/sugar mixture, so that there's just more flavor. try adding a mix of brown/white sugar for it, and some very high quality cinnamon (like vanilla, there are different qualities of cinnamon! try indonesian or vietnamese cinnamon, they taste vastly superior to the store-brand kinds)! combine your sugars and spices (a pinch of things like n and allspice won't disappoint), then add your melted butter and stir until it's a paste. spread that over the dough so there's more of that mixture in every bite! also several people have talked about over-proofing as well as not following recipes exactly for the dough--baking is a science, it's very precise. not enough or too much of an ingredient will very much ruin your end result. good luck next time you bake!
